In need of Easter recipes

I am in need of a simple appetizer and a beet recipe for Easter. What do you suggest? For this instance I prefer simple and easy.

  1. smoked salmon, cream cheese and capers on crackers or mini-bagels

    mushrooms, probably portabello,
    spinach, fresh will be good,
    feta cheese crumbled or a block chopped up
    onions, green ones,
    phyllo dough.

    saute the spinach, onions, and shrooms in a bit of olive oil with whatever salty seasoning you like and some lemon juice and pepper.
    line a muffin tin with the thawed dough for separate servings, mix saute mix and cheese and put in to the cups, then close them up, brush with melted butter, maybe olive oil could work too, then bake till crispy.

    I saw something like that today somewhere and that sounds good to me.

  4. Um… my mom stuffs button mushrooms with a mix of cream cheese, bacon, green onions and garlic and throws them in the oven = easy app.

    Or baked brie!! With apricot preserves.

    As for beets- I’ve got nothing 😦
