Make easy

I’ve been trying to make our weeknights less stressful. By the time I get home from work and exercise it’s time to make dinner as well as my lunch for the next day. All is fine except for the fact that we don’t eat until much later than we’d like.

I found something that works. On Sundays, I make a big dinner; enough to feed an army (last night it was Indian curry). That way, we can eat on left overs for a couple of days It’s not ideal if you aren’t the type that digs leftovers, but we do so it works for us.

By Wednesday, I skip my workout and make something quick and simple. This week it will be quiche with spinach, potato and bacon. I use one of those refrigerated Pilsbury pie crusts instead of making my own. I usually make a salad with mixed greens and whatever we have in the fridge/pantry topped with Parmesan and oil and vinegar.

Thursdays are usually hodge podge or pasta along with broccoli. Then it’s the weekend and we do it right with take-out and dining out. Ah….the weekends.

 

Update

The Easter weekend is upon off. My husband and I are both off from work tomorrow. I’ve been looking forward to some time off. In fact, I’ve been looking forward to a vacation. Do you know when our next vacation is planned? August 2013. I know…it’s a ways away. We shall enjoy our extended weekend in the meantime.

Our house is in the midst of potty training for our little one. We only just started last weekend and so far the process has been successful. We tried this about 6 months ago and it was a complete disaster. I’m laughing at myself. What a first time Mommy mistake. Like our son was ready back then. Ha.

At some point, our son will be moving to his new room. Lucky for him, he gets to take his crib with him. At some point, we’ll transition him to a big boy bed. We’ll start with the crib conversion first. For the record, he’s still sleeping in a crib. That is somethig my husband and I both like. Uninterrupted sleep is not overrated at all. Seriously. We’ll drag out that whole crib thing as long as we can.

Like Clockwork

Almost every Friday we order pizza for delivery. We schedule its delivery as close to our son’s bedtime as possible. That way, the hubs and I can enjoy our dinner as a couple on our sofa in front of the TV. I love Friday nights. We watch recordings of Chopped or Top Chef and catch up on the week and plan our weekend ahead.

Lately, Piccaso’s has been in the rotation. It’s a bit pricey, but worth it. We’ve been making our way through their list of speciality pizzas (the Masterpiece is our go-to pie). Last night we had the Florentine. I would have preferred it without the chicken and it needed a bit of salt. Otherwise, it hit the spot. We’ll be ordering that one again. It was a nice change from the traditional tomato sauce and the calzone crust is a must. Friday nights are great especially with pizza on the menu.

 

Round Two

The is pregnancy season and we are not immune. We are expecting our second son in July and we are thrilled. Like my first pregnancy, this one has been similiar. I was a little moody during my first trimester, but that is neither here nor there.

Desserts have been the star in our house. In fact, I have a Valrhona chocoate cake cooling on the counter just waiting to be covered with deep dark chocolaty frosting. Cookies have been present on a weekly basis. I’ve made everything from oatmeal raisin to Neiman Marcus cookies. NM’s cookie recipe is one of my favorites as well as a no-fail.

Dinners have been that of casseroles and slow cooker dishes. Who can say no to a mouth watering pot roast with onions, carrots and potatoes; somthing that gets better with a day in the fridge. Oh beans how I love you. Charro beans are cheap,easy and so delicious with a side or cornbread and/or tortillas.

We have a sitter today. We are off to see a movie and grab a bite to eat. I’m craving blue cheese chips from Jasper’s. Unfortunatly, we probably won’t be making our way that far North. Hmpf.

Good Grub

Since the beginning of the new year we’ve had some pretty good meals. Some at h0me and some out. My favorite has been  Smoke. I can’t seem to get enough of their pulled hog eggs benedict or their brisket hash. I have yet to try their biscuits and gravy or their heavy handed blueberry ricotta pancakes. I’m sure they are just as good as everything else on the menu.

Other delights include Tukta Thai, Goff’s, Capital Pub, Meddlesome Moth, El Fenix, Good-to-Go Taco, Il Cane Rosso and Houston’s. We’ve been eating well to say the least. I am eager to get back to Good-to-Go. The Trippy Chick and Paris, TX were mighty fine tacos. I pretty much want to try everything that they have to offer on the menu. I can’t imagine that anything would disappoint.

2012

Happy New Year. I still can’t believe 2011 went by so quickly. I guess that is what everyone says as each year passes.Our holidays were fabulous. My husband and I were both off from work. We saw movies and ate out daily. It was great.

I took note of something in particular. The El Fenix at Casa Linda isn’t what it used to be. If I want that same taste that I grew up with I have to go downtown or to the Northwest Highway location. No biggie. Both are close by. That’s good to know. I was getting pretty fed up with the mediocre food at the Casa Linda location.

Okay, so that was totally random, but if you love enchiladas and salsa like I do then it is a pretty big deal.
